Provence 75

The use of lavender regionalizes a classic French 75 to Provence, an area known for its lavender production.

  • 1 ounce gin
  • 1/2 ounce fresh lemon juice
  • 2 teaspoons Lavender Simple Syrup (recipe follows)
  • Ice cubes
  • 2 ounces sparkling wine, chilled
  • Lavender blossom

In cocktail shaker combine gin, lemon juice, and Lavender Simple Syrup. Add ice cubes. Cover; shake until very cold. Strain into ice-filled rocks glass. Slowly fill glass with sparkling wine. Garnish with lavender blossom. Makes 1 cocktail.

For Lavender Simple Syrup, in small saucepan bring 1/2 cup water to boil. Remove pan from heat; add 1 cup sugar. Stir until sugar is completely dissolved. Add 2 tablespoons chopped fresh lavender leaves to hot mixture. Cool to room temperature. Refrigerate 1 to 2 hours or until completely chilled. Strain mixture through fine mesh sieve into clean glass jar. Cover; refrigerate up to 1 week.
